The first Kumbira masters ends in stellar success

The 23rd edition of Kumbira, dubbed Kumbira Masters: The Food Basket of Brunei, Indonesia, Malaysia and the Philippines (BIMP) ended on a festive note with a closing ceremony and declaring Bigby’s Café & Restaurant’s chefs as the overall champion in this year’s culinary event last August 16, at the Limketkai Atrium.

Joining Bigby’s, Lourdes College Higher Ed – HM Program won the Del Monte Set Menu category (Open Division), The Oak Room CDO – Jergin Quilog won in the Mixology Challenge (Open Division); Liceo de Cagayan’s Joseph Lino Viña, dominated the Latte Art category (Open Division).

Father Saturnino Urios University won in the Pica Pica platter (Student Division); The Filipino Carver category went to Agusan del Sur College – street carver; Plated Dessert – “Mango Mania” Saint Michael College of Caraga – SMCC Plated.

Lourdes College Higher Ed – HM Program Del Monte Set Menu champion.

In Cake Decorating – BIMP Celebration Cake Saint Michael College of Caraga received two Gold; Fiesta Buffet Table Setting category went to “The Flavors of BIMP” Lourdes College Lourdes College Higher Ed – HM Program E.

Saint Michael College of Caraga SMCC centerpiece won the Bamboo Floral Centerpiece category and as well as in the Flairtending Tandem. Sevenseas Waterpark and Resort’s Brian Borjal won the Creative Ham Garnishing – “Pamasko” category (Professional Division); Nomad Bar and grill Siargao took home The Filipino Carver title; Fiesta Buffet Table Setting – “The Flavors of BIMP” and Bamboo Floral Centerpiece Gold went to Marianne Suites Hotel Inc. and Apple Tree Resort & Hotel.

In Cake Decorating (Junior Division) receiving Gold Liceo de Cagayan Junior Highschool, Lourdes College – SHS B; and LC-IBED. Fruit Shakes: Blend Your Way to the Bar category (Junior Division) also went to Liceo de Cagayan Junior Highschool.

In the Kiddie Division Liceo de Cagayan University won Gold in the Pica Pica Platter category. Meanwhile in Cupcake Decorating LDCU received two gold joining them was Saint Micheal College of Caraga who also received Gold.

Also in the kiddie division Fruit Shakes: Blend your way to the Bar category Saint Micheal College of Caraga’s Meriel Jane Mololoy-on won Gold.

The 3-day event is considered as the biggest culinary event outside the Philippines’ capital and part of this city’s Higalaay Festival core of events and participated by over a hundred professional chefs, students and home cooks with the all-out support of the hotel & restaurant industry as well as the city government of Cagayan de Oro.

Kumbira is spearheaded by the Cagayan de Oro Hotel & Restaurant Association (COHARA) with its president Eduardo Pelaez, its board members and the City Fiesta Executive Committee Head Eileen San Juan.

Organizers of this year’s “Kumbira” food showcase highlighted the significance of “halal” cuisine in the Filipino and Southeast Asian culinary landscape.

Pelaez said Kumbira Masters’ competition this year is intended for professional chefs in Northern Mindanao, while other food competitions are open for culinary students.

“We should be ready for our Asian tourists to take Filipino style halal food,” Pelaez said.

This annual culinary event showcased a variety of competition where students and professional chef test their skills in the kitchen. The said event aims to promote, appreciate and apply indigenous ingredients in local recipes, hone culinary skills and new techniques and technologies in developing local cuisine, and promote skills certification to professionalize the hospitality industry.

It also showcased exhibits and cooking demonstration by country, and the different regions of Mindanao, promote local food products, and ingredients through food tasting, and a series of seminars/demos by experts and judges of Kumbira, food-related technology and skills certification and requirements of the different countries.

For his welcoming remarks during day 1 Mayor Oscar Moreno praised Cohara for organizing Kumbira for over two decades now, saying local food is a major component of Higalaay Festival.

“It’s appreciative in a way that COHARA has the spirit to pursue and to continue in a bigger way year after year and now introducing the foods of our Muslim community,” Moreno said.
