MY definition of a home-cooked meal now is beef, pork, salmon, with salt, coconut aminos, apple cider vinegar, coconut cooking oil, butter, ghee, lard, and/or tallow.
This may change as my taste buds are changing especially now that I find beef as the most delish of all meats.
I can’t expect a resto’s home-cooked meal to have the simplest of ingredients since a resto has to focus on profits made possible by more sales. The more ingredients in making a dish palatable, the more sales.
My fish preferences used to include pompano, kutob, anduhaw, maranay, maya-maya, and lapu-lapu. Now, even the remaining salmon in my food list may soon be banished to Siberia, too.
When there are no carbs in the menu, the taste of the viand becomes stronger. I used to love Spam, and that’s with fried rice, sunny side up egg, and coffee. But Spam alone is too salty. Same for most Vienna sausages, with the Virginia brand as the only kind that I can pair with another viand for now. Also Virginia for pork canton and mandarin sausages. For hotdogs, Purefoods only. That’s it for the processed meat in my menu. Which may also be banished to Siberia because it’s, uh, processed.
The carnivore diet is definitely not for everyone, especially if transitioning from the typical Pinoy diet of rice, pancit, palabok, sweet spaghetti, pandesal, kakanin, tropical fruits, etc. Better to adopt keto first, and level up to carnivore if keto is not enough.
Now, why bother, right? If you have migraines, headaches, body aches, muscle pains, bum tummy, sinusitis, rhinitis, hypertension, diabetes, Alzheimer’s disease, autoimmune diseases, eczema, skin allergies, dandruff, psoriasis, body odor, halitosis, apnea, gum disease, fatty liver, chronic kidney disease, depression, panic attacks, anxiety, and other illnesses, you may try keto or even carnivore to see if it can help cure them, or put them in remission.
Yes, giving up carbs and eating meat is the exact opposite of what has been taught to us about health. But there’s a huge mostly faulty history behind how carbs became the healthy choice instead of meat.
Here’s an example of how those aches and pains could appear seemingly out of nowhere. There’s this tiramisu that has become popular in Cagayan de Oro. On Friday last week, its SM City CDO Uptown stall finally had stock so I tried the ferrero tiramisu. It tasted like the low-carb chocolate moist cake that we ordered from a low-carb cafe in the uptown area. Strange. Should have bought the low-carb cake instead, eh? Anyway, both yummy.
A few hours later—uttered a la SpongeBob SquarePants—my right hip began to ache. That’s the beauty of an elimination diet. It’s now easier to pinpoint what’s causing the aches and pains.
It’s difficult to give up carbs. I mean, even I had to try that tiramisu despite what I had learned about the carbs’ side effects since I started with keto in February 2022. That’s more than three years of keto and now trying so hard to transition to carnivore.
Whenever friends, acquaintances, and strangers talk about their diseases and woes, I’m always so tempted to ram the keto and carnivore diets down their throats. Because keto has indeed helped me a lot. And I’m hoping that I can now level up to carnivore to see if it will reduce my left-knee challenges.
